Our Caciocavallo di Bufala is individually hand stretched and formed. Caciocavallo di Bufala is a mature stretched cheese made with a high fat, fresh buffalo milk. The pale-yellow colored edible rind is burnished and smooth while the “pasta” inside is soft and homogeneous. The flavor profile is mildly sweet and delicate but become stronger with prolonged curing. The cheese is a perfect accompaniment to a glass of red wine.
