Calabro's Mascarpone is an Italian cheese prepared by curdling cream and milk with citric acid. It has a fat content varying from 45% to 50% and a moisture content of 45% to 47%, which brings forth a rich, thick, smooth texture. Mascarpone has a sweet tang with a citrusy finish. It is an intrinsic ingredient in desserts like Tiramisu and cheese cakes, or can be eaten on it’s own topped with fresh berries.
