Ricotta Fritters
Time: 20 minutes
Ingredients
  • 4 qts ricotta cheese
  • 1 qt parmesan cheese grated
  • 1 qt bread soaked w/ whole milk
  • 1 cup chopped parsley
  • 1 cup pickled cherry peppers minced
  • 4 cloves garlic minced
  • 6 whole eggs
  • 1 qt castelvetrano olives chopped fine
  • 2 T lemon zest
  • 1 T black pepper
  • 2 T salt
Directions

1. Mix all ingredients together until well combined

2. Form into 1 inch balls

3. Dredge in Flour/egg/breadcrumbs w/ 50% panko

4. Fry until golden brown
