Spinach Tortellini with Mozzarella and Tomato
Time: 10 minutes
  • 1 package of your favorite Spinach Tortellini¬†
  • 1 package of Calabro Mozzarella (block type)
  • 1 package of cherry tomatoes
  • Olive Oil and Parmesan Cheese for plate
  • Basil (optional)

This is a fresh and easy dinner when you don't have time to cook!

Cube Mozzarella and halve cherry tomatoes.  Make Tortellini according to package direction. Before draining, save a cup of hot pasta water. 

Put drained Tortellini back in pot, add cubed Mozzarella and Tomatoes.  Drizzle Olive oil, stir. Drizzle some of the pasta water and stir.  Serve with Parmesan cheese and chopped Basil (optional).
