Our Bufarella is fittingly named because of the makeup of the cheese. There is a large percentage of Latte di Bufala that is complemented with local Jersey milk. We produce a log style Bufala Mozzarella specifically for the high end, brick oven pizzeria. One pizzaiolo was amazed that such a Mozzarella di Bufala could be produced here locally.
