Our Ricotta di Bufala is made from the fertile whey of the Mozzarella di Bufala and Bufala milk. This rich, creamy mixture is gradually cooked to a very high temperature until the nebulous curds rise to the top of the kettle, delicate and creamy soft.
At this point, the patience of the cheese master does the rest. The curds are allowed to acquiesce and firm up, while he gently ladles the curds out of the kettle.
The Ricotta has a very smooth, savory and creamy mouth feel. The flavor has been described as bitter-sweet and citrusy.
It comes in a variety of sizes and pack styles, ranging from 4oz hand-dipped baskets to 24oz hand-dipped tins.
